The key and the plaintext determine the encrypted version of the data, usually called ciphertext.
In short:
Cryptography is a field of practice surrounding secure communications. Encryption, on the other hand, is a two-way mathematical operation that renders information unusable, i.e., produces ciphertext. The main objective is to ensure the confidentiality of information.
